Add all the ingredients, except the olive oil, into a mixing bowl with a dough hook.
Mix for about 3 minutes on the first speed, then about 6 minutes on the second speed. The dough is ready when it wraps around the hook.
Add the olive oil (75g) and finish kneading until fully incorporated.
Leave the dough in the bowl and cover with plastic wrap. Let it rest for about 2 hours.
Flour your work surface, remove the dough from the bowl, and stretch it.
Form a ball and place it in an oiled bowl. Let it rest for about 2 hours. The dough should increase in size.
Oil your parchment paper and place the dough on top.
Make dimples in the dough with oiled fingers. Add sea salt.
Bake for 15 minutes at 482°F on a baking stone, or if using a Dutch oven, bake for 20 minutes with the lid on, then an additional 15 minutes without the lid.
Let it cool on a wire rack.
